Choco-coco-nutty bites

Ingredients

  • 1 tbs almond butter
  • 1 tbs macadamia butter
  • ¼ cup raw cacao powder
  • ¼ cup shredded coconut, sugar free
  • 1-2 tbs almond milk (as required), sugar free
  • Extra shredded coconut, raw cacao powder and/or cacao nibs for coating

Method

Mix the almond butter, macadamia butter, honey, raw cacao powder and coconut together in a bowl.  Add in 1tbs at a time of almond milk until all ingredients mix into a paste.  You don’t want this paste to get too runny otherwise it will be hard for the bites to hold their shape.

Place the coconut, raw cacao powder and/or cacao nibs on separate plates.

Taking 2 teaspoons, scoop a small spoonful of mixture in one spoon.  Shape it into a tight bite with the other spoon.  Use the second spoon to leverage it off the first spoon and place it in either the extra coconut, cacao powder or cacao nibs to coat it.

Roll it around into the coating then set aside on a separate plate.  Refrigerate for 1 hour to firm up before eating.
